Recipes: Easy Chicken & Black Bean Burritos

These easy cheesy delicious burritos can't be beat.  Everyone in the family will enjoy this mild and filling dinner. 

Start by cutting 1 to 1.5 lbs of chicken into cubes and cooking on med-hi heat in skillet.  Season with salt, pepper, and chili powder.

Rinse one can of black beans.

Once chicken is cooked and there is no pink add 1 can of cream of onion or cream of mushroom soup.

Mix in 1 can of corn and the rinsed beans into one pan.  I also add 1/2 bar of cream cheese or 1/2 cup sour cream.  What ever I have on hand.   Another plus of this recipe... You can make it all in one pan.

Place mixture on flour tortilla and sprinkle with shredded cheese.  I used a mexican blend bag of cheese.
Roll with ends tucked in and place in the oven at 350 and bake for 10-12 min. to melt cheese and crisp tortilla.  You can also add rice to this recipe.

Recipe:  Easy Chicken and Black Bean Burritos
1-1.5 boneless, skinless chicken breast
salt and pepper to taste
1/5 t. chili powder
1 can black beans (rinsed)
1 can corn
1 can cream of onion or cream of mushroom
4 oz cream cheese or 1/2 cup sour cream
10 flour tortillas
shredded cheese

Cook chicken.  Add all ingredients except cheese.  Mix.  Place on tortilla, roll, sprinkle with cheese, and bake at 350 for 10 min.
